Chicken, Zucchini & Quinoa Burger Patties


Recipe from macro organic Tri Colour Quinoa

Serves: 6

Prep time: 15 min

Cooking time: 20 min


Instructions:

  • 2 cups grated zucchini, moisture removed

  • 500 g Macro Free Range chicken mince

  • 2 cups Macro Organic Tri Colour Quinoa, cooked

  • 2 garlic cloves, crushed

  • 1/4 cup chopped parsley

  • 1 tbsp lemon zest

  • 1/4 cup grated parmesan cheese

  • Sea salt and cracked black pepper

  • 1/4 cup olive oil

Method:

  1. Bring a pot of water to the boil and cook your quinoa according to packet instructions.

  2. Place zucchini, chicken mince, quinoa, garlic, parsley, lemon rind, salt and pepper in a bowl.

  3. Add parmesan until just combined. Season and mix with damp hands, then form into 6 patties. Chill for 30 minutes.

  4. In a medium hot frying pan, pan fry patties in batches, 5 minutes on each side until golden brown.

  5. Build your burger according to taste.

Left over burger patties can be served the next day with sweet chilli sauce, rice & sweet potato salad.


Tip: 1 cup of quinoa=2 cups cooked quinoa
