Chicken, Zucchini & Quinoa Burger Patties
Recipe from macro organic Tri Colour Quinoa

Instructions:
2 cups grated zucchini, moisture removed
500 g Macro Free Range chicken mince
2 cups Macro Organic Tri Colour Quinoa, cooked
2 garlic cloves, crushed
1/4 cup chopped parsley
1 tbsp lemon zest
1/4 cup grated parmesan cheese
Sea salt and cracked black pepper
1/4 cup olive oil
Method:
Bring a pot of water to the boil and cook your quinoa according to packet instructions.
Place zucchini, chicken mince, quinoa, garlic, parsley, lemon rind, salt and pepper in a bowl.
Add parmesan until just combined. Season and mix with damp hands, then form into 6 patties. Chill for 30 minutes.
In a medium hot frying pan, pan fry patties in batches, 5 minutes on each side until golden brown.
Build your burger according to taste.
Left over burger patties can be served the next day with sweet chilli sauce, rice & sweet potato salad.
Tip: 1 cup of quinoa=2 cups cooked quinoa
