Freezing passionfruit pulp

I had an overabundance of passionfruit from the vine in my backyard earlier this year, sometimes we got five a day! We decided to freeze a lot of the pulp in the ice block thing in the freezer but now I look at it it's sort of sticky and dehydrated, not snap fresh frozen like you'd but from the supermarket.

Is this a problem? Any idea what I can do differently to prevent this?
