Steak Sandwich

Goes well with Avocado and Mango Salad

Ingredients

·        2 Stone baked mini rolls

·        2 beef scotch fillets, thinly sliced

·        1 red onion

·        2 ml Balsamic vinegar

·        10 g sugar

·        Salt

·        pepper

·        1 cos lettuce

·        1 large tomato, sliced

·        2 cheese slices

·        Steak Marinade

·        10 g Dijon mustard

·        20 g butter

·        20 ml olive oil

·        Salt and pepper

·        Caramelised Onion Pickle

·        1 red onion sliced

·        20 ml Balsamic vinegar

·        20 ml olive oil

·        Salt to taste

·        Pepper to taste

·        2/3 tbsp sugar

·        Dijon mustard to taste

. ¼ cup water

Instructions

01.       Cut the mini rolls the lengthways, butter on each side and pan fry until golden.

02.       Steak marinade: combine mustard, butter, olive oil and salt and pepper in a cup and mix to combine. Spread evenly over both sides of the steaks, set aside to marinate.

03.      Caramelised Onion Pickle:  Put olive oil in a pan. Drop sliced onions and sauté until soft. 

04.       Add salt, pepper, Balsamic vinegar, sugar, Dijon mustard and water. Mix together to form a caramelized pickle.

05.      Pan-fry the stakes for 3 minutes on each side. Place on a plate and cover with foil.

06.      To Assemble the Roll: Butter the Rolls. Place cheese slice, then steak, followed by caramelized onion, tomato and lettuce. Allow cheese to melt.

Serve with chips and a side salad such as Avocado and Mango Salad. Serves 2.
