Moroccan Beef Meatballs with Couscous



Ingredients

·        500g beef mince


·        1 small onion

·        ½ cup breadcrumbs

·        1 egg

·        2 cloves garlic, crushed

·        1 bunch fresh coriander

·        2 tsp smoked paprika

·        2 tsp coriander powder

·        700g tomato passata

·        Salt and pepper to taste

·        1.5 cups/250g couscous

Instructions

01.       Place beef mince, spices, finely chopped onion, breadcrumbs, egg, garlic and ½ bunch of coriander in a bowl. Mix well with your hands. Measure out 1 tablespoon, then roll into balls.

02.       Heat olive oil in a large frying pan over medium heat. Add meatballs and cook until brown all over for about 8-10 minutes.

03.      Add tomato Passata and simmer for another 10 minutes.

04.       For the couscous add into a bowl and pour over 1.5 cups of boiling water. Cover with a plate for 5 minutes, then fluff up with a fork.

05.      Serve meatballs with couscous. Serves 4.

Dietitian top tips: Use wholemeal couscous for extra fibre. Meatballs can be frozen in portions.
