Chicken Fajitas


Ingredients

·        450 g boneless, skinless chicken breast

·        2 tbsps extra virgin olive oil

·        1 tbsp chili powder

·        2 tsps ground cumin

·        1 tsp garlic powder

·        1 large red capsicum, sliced

·        1 large yellow capsicum, sliced

·        1 onion

·        1 tablespoon lime juice

·        8 corn tortillas, warmed

. Lime wedges, sour cream and avocado for serving

Instructions

01.       Preheat oven to 200ºC. Coat a large rimmed baking tray with cooking spray


02.       Cut chicken breast in half horizontally, then slice crosswise into strips. Combine oil, chili powder, cumin, garlic powder and salt in a large bowl.

03.      Add the chicken and stir to coat with the spice mixture. Add capsicum and onion and stir to combine.

04.       Transfer the chicken and vegetables to the prepared baking tray and spread in an even layer.

05.      Roast on the middle rack for 15 minutes. Leave the tray there and turn the broiler to high. Broil until the chicken is cooked through and the vegetables are browning in spots, about 5 minutes more. Remove from oven. Stir in lime juice.

06.       Serve the chicken and vegetables in warmed tortillas accompanied by lime wedges and topped with cilantro, sour cream and avocado if desired. Serves 4.
