Pan Fried Chicken Breast

This meal goes well served over Mediterranean Salad.

Ingredients

·        2 (600 g) chicken breast

·        ½ teaspoon salt

·        ½ teaspoon black pepper

·        ¼ cup plain flour

·        1 tbsp butter

. 1 tbsp of oil

Instructions

01.       Slice chicken into thirds lengthways. You want to end up with 3 equally thin chicken cutlets as they will cook more uniformly.

02.       Pat-dry the chicken breasts with paper towel, then season with salt, pepper and dust with flour.

03.      Heat the frying pan with butter and oil over medium high heat then add the chicken cutlets and fry partly covered with a lid for 3 minutes undisturbed on each side. Remove from pan and slice into 3 strips lengthways.

Serve over Mediterranean Salad and buttered French stick on the side. Serves 6.
