Jeanette's allergy-friendly Anzac Biscuits

I'm the grandmother of seven grandchildren. When I have the children, I like to do some cooking with them. However, Tommy has an allergy to dairy, eggs and peanuts, so the other day was a day before Anzac Day, and I looked up the recipe and thought I could make that with Tommy. Tommy was very proud of the way they all turned out, and I was happy that I could do something with him, considering he has so many allergies.


Ingredients:

Dry

  • 1 cup of sifted plain flour

  • 1 cup of sugar

  • 1 cup of rolled oats

  • 3/4 cup of coconut.


Liquid

  • 125 grams of butter (I substituted it with Nuttelex)

  • 2 tablespoons of golden syrup

  • 1/2 teaspoon of bicarbonate of soda

  • 1 tablespoon of boiling water

Method:

  • Sift all the dry ingredients - except the bicarb soda - into a bowl.

  • Melt the Nuttelex.

  • Add two tablespoons of golden syrup, half a teaspoon of bicarbonate of soda and one tablespoon of boiling water to the melted Nuttelex.

  • Pour the liquid into the into the dry ingredients, and mix it up.

  • Roll the mixture into little balls (I gave Tommy a plastic fork to press the biscuits down onto the tray. They came out in different sort of shapes, but it didn't matter. It was the fact that Tommy was able to do it on his own!)

  • Bake in oven.
