Chicken Fried Rice


Ingredients

·        1 cup long-grain white rice

·        3 tbs vegetable oil

·        2 free range eggs, lightly beaten

·        0.5kg chicken breast fillets

·        2 tbs soy sauce

·        2 cups mixed frozen veg

·        ½ medium capsicum

·        ½ bunch spring onions

. Pinch of salt


Instructions

01.      Cook rice in 2 cups of water on a medium heat, turn heat off when all water absorbed.

02.      Crack eggs and mix in a small bowl.

03.      Chop up chicken into bite sized pieces

04.      Cut up spring onion and capsicum, set aside.

05.      Heat 2 tbs oil in a wok or large frying pan, when very hot add eggs and scramble, remove from pan when just cooked.

06.      Heat remaining oil and add chicken, salt and spring onions, when chicken is browned add all other vegetables. Cook for 3 minutes.

Add rice, eggs and soy sauce. Stir well until combined. Serves 4.
